Old Fashioned Apple-Raisin Oatmeal

1 1/2 cups rolled (old-fashioned) oats 4 cups cold water 1 teaspoon ground cinnamon 1 medium sized apple, cored, peeled and shredded 3 tablespoons raisins The night before combine all ingredients in a large saucepan on the stove, cover. Let sit overnight. When you wake up turn the burner on medium and stir until thickened (maybe 10 minutes, if you are really feeling rushed turn it on high and it will take less time). You can omit the apple and raisins if you like. This is a favorite in my family, it is rich and creamy! This recipe was adapted from the Vegetarian Slow Cooker cookbook.
